environs/jujutest: fix test

Fix TestBootstrapWithDefaultSeries.
It relied on the environment being unbootstrapped.

Gustavo thinks this test should really
be deleted, and replaced by a functional
test elsewhere, but I'd like to do both
at the same time when we do that.
