dockcontroller: Refactored to make it able to handle multiple Providers

Factor out Wnck dependencies of ApplicationDockItemProvider into
the new subclass DefaultApplicationDockItemProvider which is suppose to
be instanciated once.
ApplicationDockItemProvider can be pointed to any subfolder to load/save
*.dockitem files from/to.
