Fix the calculation of the up vector, including a small hack for 1d problems (this is no worse than what was there already but you may not get exactly steady geostrophic states on curved 1d surfaces).

Added 2 more shallow water tests - the f-sphere test is now activated and also a kelvin wave in the xz-plane just so we have something non-spherical and non-xy plane.
